Greens & Beans
(Serves 4)
- 3 cups dried Navy beans
- Water for soaking
- 3 lbs. fresh escarole
- Oil
- Salt, pepper
- 3 - 4 garlic cloves - minced
- Red pepper flakes
- Soak beans overnight in water
- Drain beans, add fresh water to cover and simmer beans until tender. Set aside (with liquid)
- Steam escarole until tender
- Drain escarole, add oil, salt, pepper and garlic
- Add beans and 3 cups of liquid
- Add red pepper flakes to taste
- Heat and serve
