Greens & Beans

(Serves 4)

  • 3 cups dried Navy beans
  • Water for soaking
  • 3 lbs. fresh escarole
  • Oil
  • Salt, pepper
  • 3 - 4 garlic cloves - minced
  • Red pepper flakes
  1. Soak beans overnight in water
  2. Drain beans, add fresh water to cover and simmer beans until tender. Set aside (with liquid)
  3. Steam escarole until tender
  4. Drain escarole, add oil, salt, pepper and garlic
  5. Add beans and 3 cups of liquid
  6. Add red pepper flakes to taste
  7. Heat and serve
