Escarole w/ Oil & Garlic

(Serves 4)

  • 2 lbs fresh escarole
  • 2 - 3 Tbs oil
  • 2 - 3 garlic cloves - pressed
  • Salt and pepper to taste
  • Red pepper flakes to taste
  1. Wash escarole thouroughly
  2. Put escarole in large pot, letting excess water from washing • collect in pot
  3. Steam until tender, adding water if necessary
  4. Drain water and reserve greens
  5. In large frying pan, put oil and garlic and fry garlic until golden
  6. Add greens and spices and heat through

Other greens may be substituted i.e., broccoli rabe, spinach
