Pork (Fresh Ham) Roast
(Serves large group, ~15)
- 1 whole fresh ham
- 10 - 12 cloves garlic
- Rosemary
- Bay leaves
- Salt and pepper
- Water
- Cut 10 - 12 pockets in roast big enough to hold each garlic clove
- Stuff pockets with a garlic clove, rosemary and bay leaf
- Salt and pepper roast
- Brown in high oven 425°F
- Once browned, add water to make Ajus, roast with lid 20 min. per pound.
- Remove lid ~15 min. before serving
- Serve with hard Italian rolls, with Ajus.
