Baked Rockfish

(Serves 2)

  • 1 large rockfish - dressed
  • 5 - 6 slices tomato
  • 5 - 6 slices onion
  • Salt and pepper to taste
  • Oil
  1. Place fish in roasting pan
  2. Place slices of tomatoes down the top of fish
  3. Place onion slice on top of each tomato slice
  4. Season with salt and pepper
  5. Drizzle top of fish with oil
  6. Bake in 375° oven until fish is done
